VEGETABLE KURUMA


Ingredients:
Potatoes 5 (medium-sized)Tomatoes 3Onions 2Chopped Beans, Cauliflower, Carrot, Green Peas 2 cupsChopped Ginger 3 tsp.Green Chillies 4Garlic 2 cloves (optional, if you don't like the garlic flavor)Cashews, Cloves, Raisins, Green Cardamom (CCRG) 3 tsp (crushed)Chopped Coriander 1/2 cupLemon 1
Method:
Saute the onions until golden brown in 2 tbsp of oil and add tomatoes, green chillies, ginger, garlic and CCRG.
Boil potaotes and other veggies in a pressure cooker or in an open vessel with three times the water quantity. (a tip: don't ever throw away the veggie-cooked water as it contains all the vitamins and minerals; use it for cooking).
Peel the potatoes and crush it. Add the potatoes and veggies to the sauted onions and tomatoes along with the veggie water.
Add salt, turmeric powder and red chilli powder and mix well. This is spicy enough for us, but it is better if you add some Pav-bhaji/Chana masala.
Garnish with chopped coriander and sliced lemon.
Serve hot with Rice or Chapatis.
